Feeling Happy, and Healthy!

I take a TON of pictures with my iPhone. Yes, I have the great digital camera...but I never carry it:/ SO, I've made it my mission to take great iPhone pictures.

This leaves me to wonder. If my photos only exist on my phone, or on my blog...do they actually exist? Does anyone print photos anymore???
Walgreens Photo Printing
You bet...and it's SUPER easy with the Walgreen's app!

First thing you do is download the app...easy.
Once you've done that, it is shocking how straight forward it is to cue up pictures and print them.  I chose to print from the albums on my phone, but you can take a picture, or load from Facebook.

They had them ready to print in uder 30 minutes...how crazy is that?!?

I chose to go to a Walgreen's Food Oasis store, because I had no idea what I was making for dinner tonight...so let's go pick up my photos...and do some shopping while we wait...
Check out all this loot! Yes...we're making tacos...no, they won't include orange juice and bananas...that's tomorrow's breakfast;)

I already had meat at home (or you could go meatless) so I grabbed:
  • 1 head of lettuce
  • 1 can of diced tomato's
  • 1 avocado
  • 1 can of black beans
  • 1 package of Mexican style shredded cheese
  • sour cream
  • salsa
  • 2 packages of corn tortillas
tacos with walgreen's ingredients
  1. If you are going with meat, go ahead and brown the meat in a frying pan.
  2. Heat the corn tortilla's about 20 seconds on each side.
  3. Heat the black beans.
  4. Dice up the lettuce and avocado
  5. Place them on the counter, with the sour cream and salsa and let the kiddos have at it!

Yummy tacos
So fun, so easy and REALLY yummy...just ask Miss Peach!

Re-review of Deceptively Delicious...

A few weeks ago, I reviewed Jessica Seinfeld's cookbook Deceptively Delicious. (No, I was not paid for the post, would love to be...but no) I have read much about this book on the blogosphere, and I have seen much about it on the news. Let me reiterate...I love this book. The recipes are not only easy to follow, but quite yummy. I'd say I use something from her book 3-4 times a week. Now, here is where I want to clarify...I don't not serve fresh veggies with the dishes. This book is not a way to replace veggies in yours or your child's diet. I don't know if I made that point clear in my first review. The deal here is that if I am going to serve mac-n-cheese, I'll choose the healthier one from this book over Kraft. I still serve broccoli on the side, when Miss Peach picks at the broc. and won't eat it, at least I know she got some cauliflower in the mac., or carrots in the pasta sauce, or spinach in the brownies (yes spinach...it's very good, I promise). All of these recipes are a healthier version of things that I would serve anyway. I am so happy to have this option. For the record...I highly recommend her version of rice crispy squares. I brought them to a playgroup and they were a huge hit with both kiddos and adults! They have no high fructose corn syrup (the devil) in them, they do have flax seed meal (so good for you, omega 3). Long story short, it's not replacing fresh veggies, it's just a healthier way to serve old favs. That definitely works for me!

A Better Option

Are you like me? Are you trying to find better options for your family to eat? I know I am. I am sick and tired of looking at the ingredients and finding high fructose corn syrup! It is the devil! I swear it is everywhere...Here is my little healthy alternative to frozen pizza. Cause if your like me, you love frozen pizza. I just use a wheat pita (check the ingredients, I just discovered mine has high fructose corn syrup, not happy. Really, hfcs in a wheat pita? Really!), pizza sauce in a squeeze bottle, and low fat mozzarella. Put it all together, and heat in the oven at 350 for about 10 min. Trust me, it is easy and so much better for you than the frozen variety. Lots of fiber (fiber good). To top it off, the little ones can make their own. You can toss what ever you want on them (fresh tomato, pepperoni, pineapple...). It works for me...Do you have any healthier options to old standards? Share, I need help!

Changing My Life!

OMG!!! This book has changed my life! I liked the idea of this book, so I picked it up. I am not a chef, I am just stumbling through trying to feed my little family. Maybe you are lucky, maybe your kiddos eat veggies, maybe you eat enough veggies. I know I don't eat enough good stuff. Whenever I try to feed veggies to Miss Peach, she hands them to Daddy to eat...She's not havin' it. Which brings me to the concept of this book...sneaking fruit and veggie purees into foods that you and your kiddos already love. It really works! Yesterday I made the macaroni and cheese with cauliflower puree...insanely good, low fat, (I made it with wheat pasta) Miss Peach ate it all, and then some! I can not stress how yummy the dishes are! For dinner last night I made the tuna salad and cauliflower puree...again, huge hit! Preparing the puree is quick and easy (you need a Cuisinart) and the recipes are easy to follow. I just can't say enough about this...Check it out in the bookstore, if you like what you see, buy it! No, I am not being paid for this post...Although, Jessica Seinfeld (yes the author is married to Jerry Seinfeld) if you would like to pay me, I will gladly accept a check;)

Snap Crackle Pop

I haven't been in the Works for Me Wed. game for a couple weeks. But, I have another installment of the I'm not a chef but I saw this on the Today Show recipes! Here's all you need...
-Boneless, skinless chicken breast
-Ziploc baggies
-olive oil
-rice krispies
This is so easy...I cut the chicken breast into strips (or you can just buy strips) then soak in olive oil. Then put a few handfuls of Rice Krispies into a Ziploc bag and mash it up (rolling a can over it makes it go faster). Then it's Shake-n-bake time (you know, put the strips in the bag and shake'em up). Place the strips in a pan and bake at 350 for about 20 min. I found recipe to be real easy, and real good. The best part is, my two year old loved it!!! Yeah!

Finger Lickin' Good!

Every week or so, I post an easy recipe on the blog. Those of you that know me, know that I don't pretend to be a chef...I am not exactly kitchen inclined. Now that I have the whole package; Husband, two kiddos, two step kiddos, I try to cook...So Friday on the Today Show, they made fried chicken. It looked easy, so I tried it over the holiday weekend. Guess what?!? It was easy, real easy, and real good so I am sharing it with you...Here's what you need...

-Chicken (I used a whole chicken cut into 8 pieces)
-lemon (2 whole)
-olive oil, or vegetable oil
-flour
-glad seal bags

This was so easy, it was ridiculous! This is what you do...Put the chicken in the Glad bags (mine fit into four medium sized bags) add in some olive oil and sqeeze in some lemon. Massage into the chicken with bag sealed. Let sit in the fridge for a couple hours (easy). When you are ready to cook, take the chicken out of the bags and wipe off excess juice. Then, dip the chicken in flour.

Next, put about 3/4" of oil (I used half olive oil and half vegetable oil, only because I didn't have enough of each alone) into a deep frying pan. You really need to pay attention to the heating of the oil (maybe 3/4 flame). When the oil is hot, use long tongs to put in the chicken. Heat on each side for about 10 minutes and then place on a platter with some paper towels to absorb excess oil. Be sure to monitor the heat, if it starts to boil to high, just turn it down (I had to do this a couple times). The end, your done. It's really good! I thought frying chicken would be hard and messy, it wasn't, it was easy and good. So, if all of you knew this already, pardon me for being the last one to catch up, if not give it a try! Hope you all had a great Labor Day, mine was finger lickin' gooood!
