When having a viewing party for a few friends, one must serve something sweet...no?
Let's just say mommy was thinking ahead. You see, I woke up Friday feeling like grown up Christmas morning. This greeted me in my inbox...
There is no better way to wake up in the morning than to this! Oh my Frank Underwood...what shall we nosh on while binge watching House of Cards...something Southern and oozing with goodness...
Why YES...we'll make Whoopie Pies for the Ever After High party...and then later, I can snuggle up with the Underwood's and my Southern goodness. Plan=made!
I googled Whoopie Pies...Southern Moon Pies and everything in between. Let me tell you, there are many ways to make a Moon Pie. This recipe, looked most like what I had in my head for the all day yum fest!
It was super easy to make...and the perfect accompaniment to my House of Cards binge.
Here's what you need:
- 1/2 cup butter softened
- 1 cup white sugar
- 1 egg
- 1 cup evaporated milk
- 1 teaspoon vanilla extract
- 2 cups flour
- 1/2 teaspoon salt
- 1/2 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1/2 cup butter softened
- 1 cup confectioner's sugar
- 1/2 teaspoon vanilla extract
- 1 cup marshmallow creme
Next, you'll mix 1/2 cup butter or margarine and white sugar. Add egg, evaporated milk, and vanilla. In another bowl, mix together flour, salt, cocoa powder, baking soda, and baking powder. Then, stir the flour mixture into the sugar mixture and hand mix together until combined.
Then grease a cookie sheet and place tablespoonfuls, 3 inches apart. Pop that in the oven for about 10 min. Allow to cool before filling.
For the Marshmallow Filling, In a medium mixing bowl, combine 1/2 cup butter or margarine, confectioners' sugar, flavored extract, and marshmallow creme. Mix until smooth. From here, I popped my fluff into the fridge for about 20 minutes so it firmed up.
Assemble pies by spreading 1 to 2 tablespoonfuls of filling on flat side of a cookie crust, then covering filling with flat side of another cookie crust. Sprinkle with powdered sugar...plop yourself in front of the TV and fire up House of Cards on Netflix and enjoy like that true Southern Gentleman, Frank Underwood ;)
