My Mom grows her own tomatoes. She dropped a box of them on us last weekend. They are the best tomatoes of the year, but they are ripe and if we don't eat them now they will go bad. Since it is Works For Me Wed., I thought I would share my Eat Tomatoes as Fast as You Can Recipe. I saw some cute British chef on The Today Show years ago do this and it is great!
- First, cook what ever pasta you choose. I like it best with Angle Hair Multi grain Pasta.
- All you have to do is quarter the tomatoes and squeeze them with your hands into a mixing bowl. This is great for kiddos to help with!
- Mix in olive oil, basil, I like to add fresh mozzarella and oregano as well.
- After you strain the pasta, mix in the tomato concoction.
Wallah, a great light summer pasta that you can serve hot or cold....It is what we will be having for dinner tonight and the next night, and the next night......
